Spinach Pizza (with Garlic) Watch out, this pizza is quite garlicky. Feel free to cut down on the amount. I love garlic though, as you can probably tell! You can also mince the garlic and cook it with the sauce.

Ingredients: (approximate amounts)

1 pizza shell
1 170ml jar artichoke hearts in oil or
1/2 14 oz can artichokes + 1-2 Tbsp olive oil
2-4 cloves garlic
1 cup tomato sauce
2 Tbsp basil
Pinch thyme and cayenne
Salt to taste
2 cups spinach chopped fine
Salt
1/2-3/4 cups feta cheese
2 Tbsp hard cheese such as Parmesan

Method:

Prepare pizza shell (either make it yourself or just take it out of the package)

Make tomato sauce by heating the sauce, basil, thyme, cayenne and salt. Set aside.

Chop artichokes and mix with spinach, then mix in the oil they were packed in to taste or some olive oil. Add salt to taste. (Remember, there is salt in the tomato sauce in the cheese - be sparing.) Slice the garlic thinly.

Spread the tomato sauce on the pizza shell. Sprinkle garlic evenly over sauce. Spread spinach mixture over sauce, then add finely crumbled feta cheese. Sprinkle parmesan cheese over everything.

Bake at 350° F for 10-15 minutes.

Serves 2-3
