Cookies
This recipe was first made when we were about to go on an adventure and wanted something to keep our energy up. It worked quite well. When I make this recipe I only make half, which is the perfect amount for 2 people, and the perfect amount for cooking in my toaster oven, since I don't have a regular oven! Apparantly this is Marilee's favourite cookie recipe - thanks Marilee!

Ingredients: (approximate amounts)

1 cup butter
3/4 - 1 cup cane sugar
2 eggs
1 tsp vanilla
1 1/2 cups whole wheat pastry flour
1/2 cup carob powder
1 tsp baking powder
1/2 tsp salt (optional)
2-3 cup semi-sweet chocolate chips
(organic Tropical Source prefered)
2/3 cups chopped walnuts or coconut

Method:

Preheat oven to 350° F.

Cream butter and sugar. Add eggs and vanilla and mix well.

Mix flour, carob powder, baking powder and salt in a seperate bowl. Add to wet ingredients and mix well.

Add chocolate chips and nuts and mix again. Spoon onto a lightly greased cookie sheet and bake for 10-12 minutes.

Makes 20-30 cookies
