Fried Rice
This recipe is really quick to make, and actually quite good. More filling if you use the tofu, but that is very optional. I doubt this is very authentic, (as if western chinese food is very authentic anyway!) but it is tasty. I tend to add kelp to things, because I use a miniral salt that is non iodised and kelp is very high in iodine.

Ingredients: (approximate amounts)

1 cup cooked white rice
1 carrot
1/4 cup frozen peas
1/4 cup frozen corn
1/4 block extra firm tofu (optional)
1 egg
Dash cayenne
Dash kelp powder (optional)
Salt to taste
Oil for frying

Method:

Wash, peel if you want, and dice the carrot. Grate the tofu if using.

Heat oil up in a frying pan. Add rice, carrot and tofu and stir constantly for 30 seconds. Add peas, corn and spices. Stir for another 30 seconds, making sure that rice isn't sticking to the bottom of the pan.

Add egg and stir rapidly until egg is cooked. Adjust seasonings.

Serves 2
